For this recipe I used a very soft and tender goat cheese called Chavroux from iledefrancecheese.ro. I love making bruschetta, they are easy to make and so versatile with their topping. You can always make something surprisingly or use leftover ingredients and turn them into something yummy! πŸ˜πŸ˜‹

Ingredients:
β€’ 10-12 baguette slices
β€’ 1 tsp dried oregano
β€’ 1-2 tbsp olive oil

β€’ 150g goat cheese Chavroux iledefrancecheese.ro
β€’ 5-6 strawberries, cut in thin slices

Balsamic vinegar reduction
β€’ 80ml balsamic vinegar
β€’ 1 tsp honey

Preheat oven at 180 degrees C. Line a tray with baking paper. Lay down baguette slices, drizzle with olive oil and sprinkle oregano on top. Bake for 10 minutes until golden.

Make the balsamic vinegar reduction. Pour balsamic vinegar in a small pan, add honey, stir to combine and dissolve. Simmer at low heat for 7-10 minutes to reduce and thicken.

Make bruschetta. Add 1-2 tablespoons of goat cheese on each baguette slice, top with 2-3 strawberry slices. Drizzle with balsamic reduction and decorate with fresh oregano if you have. Enjoy, is so good! πŸ˜‹πŸ˜‹
