Focaccia- festive edition 😍🎄. It was so much fun to create the Christmas tree decoration on the foccacia using rosemary branches, cherry tomatoes and goat cheese balls. ☺️❤️

Here is the recipe for the festive focaccia if you want to try it 🤗
500g strong flour
1 sachet dried yeast
330ml warm water
2 tbs olive oil + more for drizzling on top after proving
2 tbs semolina to put in the tray
10-12 rosemary branches
2 slices of soft goat cheese
12-15 cherry tomatoes
Mix the yeast with the warm water and set aside fir 5 minutes. Meanwhile add salt to flour and put them in a bowl.
Add the 2 tbs of olive oil in the water and yeast mix, then pour it over the flour.
Start mixing with your hands until it has a dough texture. Pull the dough out of the bowl, put a bit of flout on the table and start kneading the dough for about 10 minutes. Oil a large bowl and put the dough here, add a drizzle of olive oil on top also and cover. Let it raise for about 1 hour or until it doubles the volume.
Add semolina at the bottom of your tray, the add the dough and strech it to cover all the surface. Add some generous drizzles of olive oil on top and make press with your fingers all over your focaccia.
Coat rosemary with a little olive oil (to prevent it from burning in the oven). Make some little balls from the goat cheese slices.
Arrange the festive decor on top of the dough, starting with the rosemary: 2 branches for for the trunk, then branches on each side of the trunk, starting with longer ones and then using smaller ones.
Add cherry tomatoes and goat cheese balls as Christmas tree decorations near on the rosemary branches. Cut a goat cheese slice with a star shape cookie cutter to add on top of the tree.
When finishing the topping, cover the tray and let it raise for 30-40 minutes.
Preheat oven at 200 grades C. Add some slat flakes on top of the focaccia then bake it for 30-35 minutes until golden-brown.
Serve warm and enjoy it with everything you like aside. 😋
