Wild garlic is now in season. 🌱💚I found some fresh and vibrant green wild garlic in Obor market and I made these yummy waffles topped with brown mushrooms and fried egg. For extra garlicky taste, I sprinkled some green garlic on the waffles. Incredibly delicious. 💚😋

Wild garlic batter (about 6 waffles)
1/2 baking powder sachet
a pinch of salt
50g wild garlic
1 egg, separated
60g melted butter
Brown mushrooms topping (for 3 waffles- double quantities for 6 waffles)
200g brown mushrooms, cut in quarters
4 pieces green garlic
Salt, pepper to season
1 tbsp butter
1 fried egg per waffle
Make waffle batter. Add flour, salt and baking powder in a bowl. Set aside.
Start blanching wild garlic. In a boiling water pan add wild garlic for several seconds and move immediately to a bowl with ice water. Drain very well.
In a blender, add buttermilk and blanched wild garlic. Mix to combine ang get a smooth texture.
Pour this composition in the flour bowl. Whisk to combine.
Add egg yolk and melted butter, whisk until well combined.
Beat egg white separately to soft peaks. Add to the batter stirring gently with a spatula.
Cook in a waffle maker until golden.
Fry mushrooms. Add butter to a large pan. When butter has melted, add mushrooms. Shake the pan to coat them in butter and fry on evert side. Just before ending the mushrooms cooking, add chopped green garlic. Season with salt and pepper. Set aside.
Fry the eggs (as many as the number of waffles on the table).
Assemble the dish. Lay a waffle on the plate, add 2-3 spoons of brown mushrooms and top with a fried egg. Sprinkle more chopped green garlic. Enjoy! 😋🤗💚
